Quinoa Crisp Chocolate Bars 🍫🥜

These bars are made with toasted quinoa, giving them a crunch and nutty flavor. Yes, they are considered a sweet, but they make a great guilt-free snack!

Recipe:

1/2 cup of white quinoa (rinsed and drained) 3 TBSP of water 1/2 cup of chocolate chips (I used dark) Honey/peanut butter (optional) 
Directions:

Rinse and drain your quinoa. Add quinoa and water to a bowl and mix. Add about 2 tbsp’s of the mixture to a hot non-stick pan. Use a spoon to flatten out the quinoa. The water will begin to evaporate. Use a whisk to separate the pieces. Once all the water is evaporated, the quinoa will begin to make a popping sound. When it turns slightly brown, remove from heat. Repeat this process until all of the quinoa is gone.

Melt your chocolate chips in the microwave, 30 seconds at a time until all of the chips are melted.

Combine the toasted quinoa and the melted chocolate chips in a bowl.

Line a small pan (I used glass Tupperware about 4x6in), with parchment paper.

Add your mixture to the lined pan and even out. The bigger the pan, the thinner your chocolate bar will be.

Put in the freezer for 20 minutes. Add your honey and/ peanutbutter and enjoy! #forkyeahgf #glutenfree #glutenfreerecipes #celiac #peanutbutter #foodie #fyp #honey

Pad Thai recipe:

For the sauce:
* 3 tbsp coconut/palm sugar
* 3 tbsp water
* 1-2 tablespoon tamarind paste
* 2 Tbsp fish sauce
For the Pad Thai
* 4oz dry rice noodles
* 2 cloves garlic, chopped
* 1 medium roughly chopped shallot
* 3 oz pressed tofu, cut into small pieces
* Dried chili flakes, to taste (optional)
* 3 Tbsp oil (I used olive)
* Protein of choice (I used chicken)
* 1 cup bean sprouts
* Green onion (3-4 stalks)
* ¼ cup roasted peanuts, roughly chopped (optional)
* Lime wedge for serving

To make the sauce:

Melt the coconut sugar in a sauce pan until sugar begins to melt and will turn a dark brown color. Immediately add the water, tamarind, and fish sauce. Mix thoroughly and remove from heat. The sugar will have hardened, that’s okay. It will dissolve as it’s sitting to the side.

To make the Pad Thai:

Make the noodles according to the packaging. Set aside.
Cook your protein in light seasoning of choice and oil. Set aside.
Heat up enough oil to cover your wok or frying pan on medium heat.
Combine the tofu, garlic, chili flakes, and shallot in a bowl.
Add the tofu mixture and heat until the shallots become wilted.
Turn up the heat and add your sauce and noodles. Mix thoroughly until sauce is absorbed by the noodles.
Toss your cooked protein back in.
Add your bean sprouts and chives and mix.

Serve immediately, top with crushed peanuts and chives. Serve with lime wedge.

My recipe below! 👇

Peanut butter-chocolate protein balls:

🍫1 and 1/2 cups of oats
🍫1/4 cup of honey
🍫3/4 cup of peanut butter (I use natural)
🍫~1/4 cup of chocolate protein powder (I use @vitalproteins)
🍫1/4 cup of chocolate chips (I use dark)

Mix all ingredients together is a bowl, use a spoon or scoop to roll into balls, store in an airtight container in the fridge/freezer and enjoy ☺️
